I’ll admit I’m pretty new to the chicken salad game. I convinced myself for years that I didn’t like it without ever trying it. One day I thought to myself, I enjoy every single ingredient in chicken salad separately why on earth would I not like it! The pesto is an amazing flavor addition to really level up the classic chicken salad, not that its not great on its own!

Pesto Chicken Salad
A vibrant, herbaceous twist on a classic, combining tender shredded chicken with creamy basil pesto, sun-dried tomatoes, and a touch of lemon for brightness. Perfect for sandwiches, wraps, or served over greens, it's a flavorful and versatile dish ideal for any meal.
Ingredients
- 3 cups shredded chicken
- 1/2 cup basil pesto
- 1/4 cup mayonnaise
- 1/2 cup red onion, diced
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup parmesan cheese
- Juice from half a lemon
- Salt and pepper to taste
Instructions
- Place all ingredients in a large bowl and mix until everything is well combined and evenly coated.
- Enjoy right away or let it chill in the fridge to enjoy later!
Notes
Storing: Store in an airtight container in the refrigerator for up to 5 days.
