9:30 AM

Breakfast

I never used to be a breakfast person but lately I find myself getting so hungry in the mornings after my coffee so I have turned myself into a breakfast person. Toast, eggs, and fruit is my favorite blueprint for a simple and delicious breakfast.

Sourdough Toast with butter, honey, and salt

Handful of Strawberries

One egg scrambled with salt, pepper and parmesan

 

12:00 PM

Lunch

One of my favorite summer lunches and and OG Sunday at Grace’s recipe, Classic Pasta Salad! While I love making my own dressing when I have the time; I used store-bought dressing this time around and it was just as delicious. I added some marinated Chicken Thighs (recipe below) for extra protein and flavor and it was the perfect quick weekday lunch! I grilled my thighs because it’s summer, duh, but you can of course use any other method like air frying or pan frying the thighs.

Marinated Chicken Thighs

  • 1 1/2 pounds boneless skinless chicken thighs

  • 3/4 cup italian vinaigrette

Add the chicken thighs and dressing into an airtight container or plastic and mix well ensuring each chicken thigh is covered. Refrigerate for at least 30 minutes or up to 3 hours.

Preheat a grill to medium-high heat (about 400°F). Season the chicken thighs with salt, pepper, and your desired spices. Place them on the grill, skin-side down if using skin-on thighs. Grill for 5–6 minutes per side, or until the internal temperature reaches 165°F and the outside is nicely charred. Let rest for a few minutes before serving.

Dinner

I have been working my way through the Wishbone Kitchen cookbook, like everyone else! But tonight was the Slow Roasted Salmon with Ponzu served with mini cucumber slices and white rice. Ponzu was a lot harder to find that anticipated because it was sold-out everhwere I went so I ended up making my own version of it. It obviously wasn’t perfect but I thought it was a good substitute in a pinch.

The recipe itself however was so so good, nice and light and very versatile for a week of dinners. My personal rating of this one would be 8/10, very good but not show stopping for me.

Dessert

I know for most people these are probably a breakfast food but the Fairlife Core Power shakes taste so good that they double as a healthy milkshake for me. I only drink these for dessert if my dinner wasn’t the most filling or satisfying because they are definitely pretty filling before bed.
