Crispy Chicken Tacos

These crispy chicken tacos are packed with crunchy chicken, tangy coleslaw, and served in a warm toasted tortilla for the perfect bite-sized burst of flavor. They’re a quick, satisfying twist on a street food favorite.

An absolute staple for me! A little different than your classic taco and so deliciously fresh. I almost always use frozen chicken for this recipe, it tastes amazing and is so quick! My favorite is the Kirkland Breaded Chicken Breast Chunks from Costco, these are never missing from my freezer. Of course you can always bread and crisp up your own chicken to make it your own; but frozen is hands down my favorite. Skipping the crispy chicken and using shredded chicken is always a great option as well.

Crispy Chicken Tacos

These crispy chicken tacos are packed with crunchy chicken, tangy coleslaw, and served in a warm toasted tortilla for the perfect bite-sized burst of flavor. They’re a quick, satisfying twist on a street food favorite.

Ingredients

  • 9 oz of frozen chicken nuggets (about 3 cups)*
  • 1 cup shredded Mexican blend cheese
  • 6 street taco size flour tortillas (4 in)
  • Hot sauce for topping
Coleslaw
  • 1 (14 oz) package of coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tbsp white vinegar
  • 1tbsp apple cider vinegar
  • 1 1/2 tsp granulated sugar
  • salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together mayonnaise, white vinegar, apple cider vinegar, and granulated sugar until smooth. Add the coleslaw mix and stir until evenly coated. Season with salt and pepper to taste. Set aside.
  2. Cook the chicken according to package instructions. I prefer the air fryer for the best crisp on the chicken.
  3. While the chicken cooks, heat a medium pan over medium-high heat. Place the tortillas down letting them toast until golden brown on one side, about 1 minute. Flip the tortilla, sprinkle with cheese, and continue to toast the other side for another minute until the cheese is melted. Transfer to a plate. Repeat as needed.
  4. Once cooked, remove the chicken from the air fryer and roughly chop into bite-sized pieces.
  5. Place the chopped chicken over the melted cheese on each tortilla. Top with the prepared coleslaw and drizzle with hot sauce if desired.
